Description
Stevioside is a white fine powder. It is stable in acid and salt solutions and is stable at room temperature. Soluble in water, it will absorb moisture quickly in the air, and the solubility at room temperature exceeds 40%.
Application
Stevia, commonly known as stevioside, is the sweet component in stevia. It is distributed in the stems and roots of the leaves of stevia, but the content is the highest in the leaves, and its content changes with the growth process. The budding period reaches the highest. Stevia is favored because of its non-toxic, safe and low-calorie characteristics. It is known as the third sugar source in the world. The biological activity of stevia and product development research have aroused the interest of many scholars at home and abroad. Stevia is a mixture of 8 glycosides composed of the same diterpene ligand. It does not contain sugar and calories; the color is white to slightly yellow, the taste is suitable, and there is no peculiar smell. It is a new sugar source with broad development prospects.
Steviol glycoside is a sweetener that has a natural low calorific value and is very close to the taste of sucrose. After sugar cane and beet sugar, it is the third natural sweetener with development value and health esteem. It is internationally known as "the world's third sugar source". Stevia is widely used in the food industry to produce high-sweetness, low-calorie, low-salt and anti-caries foods.
