Description
Rhamnose is a white crystalline granule or powder. It is soluble in water and methanol, slightly soluble in ethanol. Its crystal forms in two forms, α type and β type. The α type contains one molecule of water of crystallization, loses crystal water after heating, and is converted into β type (molecular weight: 164.16); the β type is extremely hygroscopic and converts moisture into α in the air. Commonly used is α-L-rhamnose, which has a molecular weight of 182.11.
Application
Rhamnose can be used to determine intestinal permeability, can be used as a sweetener, and can also be used to produce flavors and fragrances.
