Nisin is a light brown to milky white powder. It contains 34 amino acids and has an approximate empirical formula of C143H230O37N42S7. It is a mixture of closely related polypeptides produced by strains of the Lactococcus lactis subsp. lactis Lancefield Group N in a sterilized milk-culture medium.
Application
Nisin is primarily used as a preservative in the food industry. It inhibits most Gram-positive bacteria and has a strong inhibitory effect on spores of Bacillus
