Description
Maltol occurs as a white, crystalline powder with a characteristic caramel–butterscotch odor, and is suggestive of a fruity-strawberry aroma in dilute solution. One gram dissolves in about 82 mL of water, in 21 mL of alcohol, in 80 mL of glycerin, and in 28 mL of propylene glycol.
Applications
1. Used as food flavors, mainly used in pastry, chocolate, candy, tobacco and alcohol flavors, as a sweetener and aroma synergist. Adding trace maltol into food not only improves and enriches the flavor, but also prolongs the storage period of food without mildew.
2. Commonly used in daily necessities, but the dosage is extremely low.
3. Maltol is also an excellent material for uniform coating of photographic film to prevent spots and streaks.
4. The skin care cosmetics formulated with it has the effect of inhibiting the growth of melanin and whitening the skin.
