Description
Sodium bicarbonate is a white or almost white, crystalline powder. It is soluble in water, practically insoluble in ethanol (96 per cent). When heated in the dry state or in solution, it gradually changes into sodium carbonate.
Application
1) Sodium bicarbonate can be used as fermentation agent in food industry, carbon dioxide generator in soda and cold drink, and butter preservative.
2) It can be used as acidity regulator and chemical leavening agent. It can be used in all kinds of food that need to add leavening agent. It is often mixed with ammonium bicarbonate to make leavening agent for biscuits and cakes. It can be used appropriately according to production needs.
3) When used alone, it will be strong alkaline due to thermal decomposition, and it will be yellow when used in bread, and destroy the vitamins in wheat. It is best to use it with acid substances such as calcium hydrogen phosphate.
