Malic Acid occurs as a white or nearly white, crystalline powder or granules having a strongly acid taste. One gram dissolves in 0.8mL of water and in 1.4mL of alcohol. Its solutions are optically inactive. It melts at about 130°.
DL-malic acid is a white crystalline or crystalline powder. It is synthesized and produced by fumaric acid (fumaric acid). Because the human body cannot metabolize DL-malic acid, although European and American countries allow DL-malic acid as a food additive, But people always feel insecure.
DL-malic acid has the following uses:
(1) Used as a sour agent for refreshing drinks and foods, a color retention agent for fruit drinks, etc., and preservatives (emulsification stabilizers for mayonnaise, etc.).
(2) It is used as a raw material for medicines, cosmetics, dental detergents, metal cleaners, buffers, anticoagulants for the textile industry, industrial deodorants, and fluorescent whitening agents for polyester fibers, as well as for the production of alkyd resins.
(3) When used as flavor enhancers, flavoring agents, auxiliary drugs and pH control agents, the United States stipulates that hard candy should not exceed 6.9%, and other foods should be about 6.7%.
