Alpha-Amylase is a light brown powder. It is almost insoluble in ethanol, chloroform and ether, soluble in water, the solution is light yellow to dark brown.
Alpha-Amylase can catalyze the hydrolysis of starch to produce beer, rice wine, sauce, monosodium glutamate and antibiotics. It can also be used in the production of glucose, sucrose and dextrin.
